While I'm not officially following Weight Watchers, the point system helps me to identify "expensive" meals and keep within my recommended calorie allotment--something I deparately need since I've been such a slacker in the going-to-the-gym department. And instead of wading through seas of couples on Saturday, we will be spending the evening at home with good friends, enjoying Randy's special and very yummy Green Chicken Enchiladas, rice and beans with homemade sopapillas for dessert (I don't even want to think about how many WW points for this meal).

Hey, could I get Randy's recipe for those enchiladas? I keep hearing good things about them and I've wanted to try them.

I wonder if Embry would dig the chicken baseballs for the sheer fact that they are called baseballs. He is my pickiest eater. Worth a try!
We tried a taco casserole recipe last night. I found it while searching for cheap recipes. Pretty good. Trying new recipes the rest of the week... homemade pizza and a curry chicken and rice recipe.
Oh, and Thursday night, I won't be cooking or eating leftovers because I will going out to a fancy dinner with my man, thanks to a little Christmas gift from Kyle's attendings. :)
And if you're wanting to post the chicken enchilada recipe... I'm interested too!
I think I may very well make those baseballs for dinner tonight. My boys will be tickled when I tell them we're havin' baseballs for dinner!
