I've mentioned before how much I enjoy finding and trying new recipes. So, to support my "habit", I found this swap, hosted by Randi @ I Have To Say. This month's edition is focused on Lunchtime Favorites.
One of my favorite lunchtime meals is a recipe that a dear friend shared with me a couple of years ago. I enjoy it so much that I make it at least twice a month.
Tortellini with Zucchini
1 pkg. refrigerated cheese tortellini
1 medium red bell pepper, chopped
3 cups julienne cut zucchini
1/2 t. garlic powder
1/2 t. dried basil
1/4 t. salt
1/4 cup water
1/2 t. chicken bouillon
1/4 cup shredded mozzarella cheese
Cook tortellini according to package instructions. Meanwhile, spray large skillet with non-stick spray. Heat on Medium-High until hot. Add zucchini, red pepper, garlic, basil, and salt. Cook and stir 3-5 minutes or until veggies are crisp-tender. Drain tortellini; rinse with hot water. Add tortellini, water and chicken bouillon to veggies. Mix gently. Cook for 3-5 minutes over Medium-Low until thoroughly heated, stirring occassionally. Add cheese. Toss gently to combine. Enjoy!
