Getting involved with Menu Plan Monday over at I'm an Organizing Junkie was one of the best decisions I've made regarding my efforts to get my home organized. Planning meals has made my grocery shopping so much easier (and when I'm having to drag two small children along for the ride, there's no time for dawdling--that is, unless you don't mind dealing with a breakdown in the middle of the dairy isle), and it has kept me from spending excessively. And even though Randy still asks me every day what's for dinner (when it's posted on the fridge for all to see), the meal plan provides me with an answer other than "I don't know, what do you want to eat?", which is the most frustrating part about not having it all laid out beforehand.
One of my Resolutions for 2009 is to continue planning menus each week, with the inclusion of a little something new, to try at least one new recipe each week and then post a review. I just LOVE trying a new recipe, so this shouldn't be something too unreasonable to accomplish.
So here's my plan for this first week of 2009:
Monday: Baked Turkey & Jack Cheese Chimichangas
Tuesday: Quinoa Stuffed Bell Peppers
Wednesday: leftover chimichangas
Thursday: leftover peppers
Friday: Chicken with Snap Peas **new recipe**
Saturday: Steaks with baked potato & veggies
Sunday: leftover chicken with snap peas

May I ask a question? Why do you cook two nights in a row and then have leftovers for two nights? Why not alternate cooking and leftovers? Does it have to do with Randy's schedule? Just curious.
You have me thinking about MPM and I may start posting next week. I may even try some of your new recipes! The chicken and snap peas looks so delish!ozi
Cooking two nights in a row keeps me from having to eat the same for dinner two nights in a row, simply just changes things up *a bit*. ;-)

My menu this week will consist of breakfast at Cinderella's castle, lunch with Winnie the Pooh and dinner with Mickey!!! We will be flying out tomorrow and should be arriving in Orlando at this time tomorrow. However, I may actually try to do MPM when I get back. My attempt last year did not last very long. You'd think it would be easy since I already have a meal plan every week....go figure.

Ummm can I come over for dinner this week?!:) Goodness, I wish I could get off my lazy bum and cook! I have zippo desire to do any cooking, thank goodness for amazing church buddies who are doing the cooking temporarily for us!:) thanks for checking out our blog, you are so great about posting and like I have said before, you always bring a smile to my face with your comments. I am glad that we are all "that mom" it kinda makes me feel a little bit better about constantly tooting our mitchell horn:). I don't want to seem like we are bragging ;)! we just adore him! I love your little thumbnail picture of the three of you. your kiddos are so not babes anymore! they are real kids! :) josiah is turning out to be a little stud!! so darn cute! lots of love to your family!
